The ingredients needed to make Chicken ChOW Mein:
  1. Prepare /6oz chicken thigh fillets, cut into bite size pieces
  2. Prepare green cabbage or Chinese cabbage, finely shredded
  3. Prepare peanut oil (or other cooking oil)
  4. Prepare garlic finely chopped 200g /6 oz fresh chowmein noodle
  5. Prepare carrot, julienned
  6. Take Capsicum
  7. Take shallot/scallions/green onions, cut into 5cm/2" pieces
  8. Take / 65 ml water
  9. Get chow mein sauce:
  10. Take cornflour / cornstarch
  11. Take soy sauce
  12. Get oyster sauce
  13. Get White pepper
Instructions to make Chicken ChOW Mein:
  1. Cut all vegetables and set aside.
  2. Marinate Chicken: Pour 1 tbsp of Sauce over the chicken, mix to coat, set aside to marinate for 10 minutes.
  3. Noodles: Prepare the noodles according to the packet instructions (my pack says soak in boiled water for 1 minute), then drain.
  4. Heat oil in wok or large fry pan over high heat.Add garlic and stir fry for 10 seconds or until it starts to turn golden - don't let it burn!
  5. Add chicken and stir fry until the surface gets a tinge of browning but inside is still raw - about 1 minute.
  6. Add the capsicum, carrot, and the Green Onion. Stir fry for 1 1/2 minutes.
  7. Add the noodles, Sauce and water*. Stir fry for 1 minute, tossing constantly.
  8. Now it's ready for serve.
