The ingredients needed to make Amla Launji:
  1. Get 8-10 Indian Gooseberry /amla
  2. Make ready 1 inch Ginger / Adrak
  3. Get 5-7 tbsp Jaggery Powder
  4. Prepare 5 Green Chillies / Green chilli
  5. Prepare 1 tsp Laal mirch powder
  6. Take 1/2 tsp Haldi Powder
  7. Get 1 tsp Salt
  8. Take 1/2 tsp black salt
  9. Prepare 3 tbsp Cooking Oil
  10. Take 1/2 tsp Kalonji
  11. Make ready 1 tsp Fennel Seeds / Saunf
  12. Prepare 1/2 tsp cumin powder
Instructions to make Amla Launji:
  1. Pressure cook the amla for 4 whistles and remove the seeds and separate the slices.
  2. Add 2 tsp oil in a pan and add Saunf and Kalonji. When it starts crackling add sliced green chilli.
  3. Add amla and Jaggery powder and saute for few minutes on low flame.
  4. Add the spices - haldi, lal mirch, jeera powder and salt and mix. Cover and cook on a low flame for 5-7 minutes or till the gravy thickens.
  5. Wait for the dish to cool down completely, and then store in a jar.
