Instructions to make Veg Frankie Roll:
  1. Knead all-purpose flour with oil, salt and water to a smooth and soft dough. Cover and keep aside for 15 to 20 minutes.
  2. Take medium sized balls from the dough and roll to a thin chapati by dusting all-purpose flour.
  3. Gently place the chapati on the hot tava. When you see small blisters and bubbles appearing, flip and cook the other side by applying some oil. Make rotis this way, Cover and keep aside.
  4. Heat the oil in a pan on medium heat. Once hot add crushed garlic and green chili. Sauté for a minute.
  5. Then, add onion paste and fry on medium flame for a minute. Then, add tomato puree and cook for 2-3 minutes on medium flame.
  6. Then, add all the dry spices to it. Mix well and cook for a minute on low flame.
  7. Now, add mashed potatoes and mix well. Cook for few minutes on medium flame.
  8. Then, add crumbled paneer to it. Mix well and cook for a minute. Turn off the stove and mix in chopped cilantro.
  9. Once it is cool to touch, divide it into equal portions and shape it into a cylindrical log.
  10. Heat the pan on medium heat. Add a generous amount of oil and fry the potato rolls from all the sides till they get golden brown in color. Remove it to a plate.
  11. Now add a teaspoon of oil and place the partially cooked roti and cook the bottom side. Apply oil and topside, flip and cook another side.
  12. Place the cooked roti on a work surface and place the potato roll on one side. Spread tomato ketchup and coriander-mint chutney to it.
  13. Sprinkle chopped onion, chili vinegar and Frankie masala over it and roll it to make Frankie roll.
  14. Finally, serve it with tea or coffee.
