  2. Chop the veg and cook in a little oil. Add the vegan mince or lentil. Add the chopped tomatoes, garlic and herbs and bring to a simmer.
  3. Prepare the lasagne by adding a layer of the tomato and veg, a layer of lasagne and a layer of white sauce. Top with bread crumbs or vegan Parmesan and herbs.
  4. Bake in an oven for around 35 minutes at 200c. I served in individual dishes with a side salad šŸ˜Š
