Steps to make Nawratan Pulao:
  1. In a wok heat oil and fry the potatoes, carrots, beans for 4-5 mins. Set aside
  2. In the same oil add paneer and fry till golden in colour. Set aside
  3. In the same oil add cauliflower florets and fry, set aside
  4. In the same oil add raisins, cashew, almonds and walnut and fry for 1-2 mins. Set aside
  5. In the same oil add green cardamom, cloves, cinnamon stick, ginger garlic paste, chopped garlic, bay leaves. Fry for 1-2 mins
  6. Add the cooked rice and fry on medium heat for 4-5 mins
  7. Add saffron dipped in milk to the rice and stir. Add the fried vegetables and peas, lime juice. Add salt and fry well.
  8. In a separate pan heat ghee and add cumin seeds, and after few seconds pour into the rice. Stir well. Set aside
  9. Garnish with lime wedges, sprig of coriander leaves and green chilies and serve
