Chole bhature is one of the most well liked of recent trending meals in the world. It is easy, it is quick, it tastes yummy. It’s appreciated by millions every day. They are fine and they look fantastic. Chole bhature is something which I have loved my whole life.

The ingredients needed to make Chole bhature:
  1. Prepare 400 gm Chickpea/white channa
  2. Get 4 pieces Gooseberry dried/sukha amla
  3. Make ready 1/4 tsp Soda
  4. Get 1 medium Onion paste
  5. Make ready 2 medium Tomatoes puree
  6. Take 1 tsp Garlic paste/lehsun
  7. Take 1 tsp Ginger paste/adrak
  8. Take 1 tsp Cumin seeds/jeera
  9. Take To taste Salt
  10. Prepare 1 tsp Red chill Powder/lal mirch
  11. Get 1 tsp Coriander powder/dhaniya
  12. Make ready 1 1/2 tsp Chole masala
  13. Prepare 1 tsp Carom seeds/ajwain
  14. Make ready 2-3 Green chilli/hari mirch
  15. Take 1 Black cardamom/badi elaichi
  16. Get 1 inch Cinnamon stick/dalchinni
  17. Get 1 Bay leaf/tej Patta
  18. Make ready 2 Clove/long
  19. Make ready 3-4 Black pepper/Kali mirch
  20. Get 4 tbsp Oil
  21. Make ready for garnish
  22. Make ready 2 tsp Fresh coriander leaves
  23. Take 1 Onion chopped
  24. Get bhature ingredients
  25. Take 2 1/2 cup Maida/All purpose flour
  26. Make ready 2 tsp Sugar
  27. Make ready 1/2 tsp Baking soda
  28. Prepare 1 tsp Baking powder
  29. Make ready 1 tsp Salt
  30. Prepare 5 tbsp Oil
  31. Get 5 tbsp Yogurt / Dahi
  32. Get as needed Oil to deep fry the bhatura
Instructions to make Chole bhature:
  1. Chickpea Boiling Method
  2. Rinse and soaked white chanaovernight.
  3. Drain water and transfer to a pressure cooker.
  4. Add water, Gooseberry/amla, Black cardamom/badi elaichi, cinnamon stick/dalchinni, soda and place over medium flame.
  5. After 2 whistle simmer for 30 minutes.
  6. Once done drain chickpea water and reserved the water in a bowl.
  7. Chickpea tadka
  8. Heat a wok over medium flame and add oil.
  9. Add cumin seeds,bayleaf,clove, black pepper and saute.
  10. Now add onion paste, ginger paste,garlic paste and saute for 3 - 4 minutes over low flame.
  11. Once onion turn brown add red chilli powder, coriander powder, chole masala, salt and saute until oil start leaving sides.
  12. At this stage add tomatoes puree and cook for another 5 to 10 minutes or until it starts leaving sides.
  13. Now add Carom seeds/ajwain and slit green chilli and saute.
  14. Lastly add boiled chickpeas along with 3 cups of the reserved water and cook.
  15. Bring to a boil till the gravy has very little water.
  16. Garnish with coriander leaves and chopped onions.
  17. Bhatura method
  18. In a large plate pour maida.
  19. Add sugar, baking soda, baking powder, salt, oil and yogurt.
  20. Using your hand start kneading to form soft dough and add water as required to form a soft dough.
  21. Once done grease the dough with oil. Place it in a bowl and cover the dough with a samp cloth and keep aside for 2.5 hours.
  22. After 2.5 hours the dough is ready to roll. Divide the dough into equal portions approximately 14 to 15 portions.
  23. Take 1 portion at a time and start rolling the dough using a rolling pin.
  24. In a frying pan, heat the oil on high flame.
  25. Deep fry them until they are golden in colour. Keep pressing and flipping the bhatura lightly.
  26. Serve hot.
