The ingredients needed to make Udupi sambar:
  1. Take For sambar masala-
  2. Take 10 Kashmiri chillies
  3. Get 2 tbsp coriander seeds
  4. Prepare 2 tsp Urad dhal
  5. Make ready 1/2 tsp fenugreek seeds
  6. Make ready 1 tsp cumin seeds
  7. Make ready 6 pepper corns
  8. Make ready 1 cup Scraped coconut
  9. Take 1 lime size Jaggery
  10. Make ready 1 Tamarind Gooseberry size (soak in warm water)
  11. Take 1 cup Thoor dhal
  12. Prepare 1 tsp Turmeric powder
  13. Make ready 1 Carrot
  14. Make ready 1 Manglore cucumber
  15. Get to taste Salt
  16. Get For tempering:
  17. Get 1 tsp Mustard seed
  18. Take little Hing
  19. Take 15 Curry leaves
  20. Get 4 dry red chillies
Instructions to make Udupi sambar:
  1. Wash and Cook thoor dhal in a pressure cooker with turmeric powder. Mash and keep.
  2. Heat a pan, add 1tsp oil, fry all the dry ingredients and remove pan and add coconut, mix, let it cool. Grind as paste
  3. In a vessel cook the vegetables until soft, add mashed dhal, ground paste, jaggery, salt to taste, and add tamarind juice.
  4. Let it boil for few mins, now tempering the sambar with mustard seed, chilli, curry leaves. If you like add 1tbs of ghee to add more flavour
