The ingredients needed to make Udupi sambar:
Take For sambar masala-
Take 10 Kashmiri chillies
Get 2 tbsp coriander seeds
Prepare 2 tsp Urad dhal
Make ready 1/2 tsp fenugreek seeds
Make ready 1 tsp cumin seeds
Make ready 6 pepper corns
Make ready 1 cup Scraped coconut
Take 1 lime size Jaggery
Make ready 1 Tamarind Gooseberry size (soak in warm water)
Take 1 cup Thoor dhal
Prepare 1 tsp Turmeric powder
Make ready 1 Carrot
Make ready 1 Manglore cucumber
Get to taste Salt
Get For tempering:
Get 1 tsp Mustard seed
Take little Hing
Take 15 Curry leaves
Get 4 dry red chillies
Instructions to make Udupi sambar:
Wash and Cook thoor dhal in a pressure cooker with turmeric powder. Mash and keep.
Heat a pan, add 1tsp oil, fry all the dry ingredients and remove pan and add coconut, mix, let it cool. Grind as paste
In a vessel cook the vegetables until soft, add mashed dhal, ground paste, jaggery, salt to taste, and add tamarind juice.
Let it boil for few mins, now tempering the sambar with mustard seed, chilli, curry leaves. If you like add 1tbs of ghee to add more flavour
