Steps to make Lentil Bolognese:
  1. Cook the spaghetti as instructed on the packet.
  2. In a large-skillet, add the garlic, onion, oregano, mushrooms, grated veggies, red-pepper, pepper and salt, combined with 2-3 tablespoon olive-oil, also saute about 3-5minutes till the veggies are tender.
  3. Then add the tomato-sauce, diced tomatoes, water and lentils and stir to blend. Adjust salt. Simmer for about 15-18 minutes or till lentils are cooked. stirr occasionally.
  4. In another skillet heat remaining olive oil. Add 1 tsp oregano, rest garlic and some pepper flakes and salt. Toss cooked spaghetti. Add some parsley.
  5. Serve lentil bolognese over pasta, sprinkle with extra red-pepper-flakes, chopped parsley and green chillies. Enjoy !!
