  15. Take 2 tablespoons coriander leaves chopped
  16. Get 1 tablespoon cooking oil

Instructions to make Tuvar Tomato Shorba:
  1. Wash toor dal under running water and soak for 15 minutes.
  2. Heat oil in a pan and add cumin seeds and bay leaves - Once they crackle, add minced green chillies, ginger asafoetida and fry for another 10 seconds
  3. Add chopped onion, tomatoes and carrots and sauté for a minute
  4. Now add the soaked dal along with 2 cups of water to the cooker and mix well.
  5. Now add the other spices like coriander powder, turmeric powder, black pepper powder and salt
  6. Close the lid of the cooker and let it boil, on high flame until 1 whistle, then switch off the flame, let the pressure release naturally
  7. Now add a cup of vegetable stock, I also added beetroot in preparing the stock.
  8. Mix well, adjust the consistency by adding more stock as shorba consistency usually consumed is thin.
  9. Garnish with chopped coriander leaves and a fash of lemon juice - Hot Vegan tuvar Tomato soup is ready to be served
