  2. Get 2 tbsp oil
  3. Prepare 1 large onion
  4. Take 2 medium-size tomato
  5. Prepare 12 cashews
  6. Make ready For paneer kofta :
  7. Get 2 potatoes, boiled and smashed
  8. Make ready 1/2 cup paneer crumbled
  9. Prepare 1 tsp coriander powder
  10. Get 1/2 tsp cumin powder
  11. Prepare 3 tbsp chopped cashews and almonds, toasted
  12. Make ready 2 tbsp chopped coriander leaves
  13. Take 2 tbsp maida
  14. Get as per taste Salt
  15. Prepare as required Oil for frying
  16. Prepare for malai gravy :
  17. Get 2 tbsp oil
  18. Get 2 tbsp butter
  19. Prepare 1/4 tsp jeera
  20. Make ready 1 bay leaf
  21. Make ready 1 tsp Kashmiri chili powder
  22. Make ready 3/4 tsp coriander powder
  23. Take 1/4 tsp cumin powder
  24. Make ready 1/4 tsp turmeric powder
  25. Get 1/4 tsp garam masala powder
  26. Get 1 tsp ginger garlic paste
  27. Prepare as per taste Salt
  28. Get Pinch sugar
  29. Take 2 tbsp fresh cream
  30. Prepare 1 tsp kasuri methi crushed
Steps to make Malai kofta:
  1. For puree heat oil in pan. Add sliced onion and fry until translucent. Add chopped tomatoes and saute for a minute.
  2. Add cashews and cook well until tomatoes are soft. Let it cool completely.
  3. Meanwhile in bowl take smashed potato and crumbled paneer.
  4. Slightly toast the dry fruits and add it to the bowl with other ingredients (except oil). Mix well and make small ball size kofta.
  5. Heat appe pan, add few drops of oil in the moulds. Place kofta in the mould and fry them on medium flame on all sides until golden brown and crispy. Remove on to a plate.
  6. Transfer the cool mixture to the mixer jar and grind it to a smooth puree adding water if required.
  7. Strain the puree to get rid of skin and seeds.
  8. In a pan heat oil and butter. Add jeera and bay leaf. On low flame add all the spice powders and saute until aromatic. Add ginger garlic paste and saute until raw smell goes away.
  9. Add the strained puree along with salt and sugar. Cover and cook until oil oozes out.
  10. Add fresh cream and combine well on low flame. Add water if required to adjust the consistency. When its boiling add crushed kasuri methi and mix well. Malai gravy is ready. Let it cool down a bit.
  11. Transfer the warm malai gravy to serving bowl and place kofta in the gravy. Garnish with cream and coriander leaves. Serve with roti and jeera rice.
