The ingredients needed to make Boondi Raita:
  1. Take Boondi , plain
  2. Take Curd , chilled, beaten till smooth
  3. Prepare Water , chilled
  4. Take Milk , chilled OR substitute with water
  5. Make ready Salt to taste
  6. Get Roasted cumin powder
  7. Make ready Red chili powder
  8. Make ready Black salt (optional)
  9. Make ready Coriander leaves , finely chopped
Steps to make Boondi Raita:
  1. In a bowl, whisk the curd/yogurt till smooth, add the milk, water, black salt, 1/4 tsp red chili powder, 1/4 tsp roasted cumin powder and salt.
  2. If you want a soft on bite boondi raita, add the boondi to the yogurt mixture and refrigerate it for at least 30 mts before serving.
  3. If you want a crisp raita, add the boondi to the yogurt mixture just before serving and mix well. Sprinkle roasted cumin powder and red chili powder.
  4. Garnish with chopped coriander leaves. Serve chilled with paratha, pulao or biryani.
