The ingredients needed to make Designer Samosa:
Make ready maida
Get salt
Get soda
Take kalaunji
Take lukewarm ghee
Make ready warm water
Make ready Roasted Potatoes
Instructions to make Designer Samosa:
First boil 5 potatoes, peel them & mash them with turmeric,salt,garam masala, khatai powder,green chillies& red chill flakes.Put some oil in a pan & fry them on low flame for 10 minutes.Turn off the gas & put some finely chopped Coriander leaves
Take one large bowl & put maida,kalaunji,salt,soda & mix them
Pour lukewarm ghee into the mixture & again mix it properly
Now make a dough, as for Puri by putting some 1/2 cup warm water into the mixture
Let it rest for 5 minutes. Knead the dough & take one lump & spread it to the shape of roti on the kitchen platform with the help of Belan & cut into 2 piece
Let one piece be plain & make strips on the second piece with the help of Knife & make a dilute mixture by putting 1 teaspoon maida with water in a small bowl
Now spread this mixture on tips of both the pieces throughout & paste them properly by putting one piece upon the other
And press them gently
Now shape this into a cone and press the edges after putting some dilute Maida mix
Fill some potato mixture into the cone & again seal the top edges properly
Make the shape of Samosa by twisting a bit as shown in the pic below
Let these Samosas rest in fridge for 30 minutes
Put refined oil as per requirement in a Kadahi and heat it to the desired level,put the Samosas taken out from the fridge into Kadahi & put the flame between slow to medium
After 5 minutes, turn the Samosas upside down, take out from the pan after they are golden brown,serve the Samosas with green Chutney
