  6. Strain and run through cold water.
  7. In a non-stick pan, add a tbsp oil and add chopped onion, carrots, capsicum and corn and saute till soft.
  8. Add tomato puree and salt and mix well.
  9. Add pasta and mix well.
  10. For pesto sauce:
  11. Grind basil leaves, pinenuts, cashews, garlic to coarse.
  12. Add cheese and lemon juice and again grind to coarse.
  13. Take out in a bowl, add salt and pepper and oil to adjust the consistency.
  14. How to assemble:
  15. On a serving plate, place pasta and then place appe on it, surrounding the pasta put pesto sauce.
