Instructions to make Uttrakhand urad dal vadas:
  1. Soak the urad dal overnight. Then drain the water & rinse well.
  2. Now add ginger & green chilli & grind it coarsely in a mixer grinder (you can use mortar and pestle as well). Use a little water at a time if you are unable to get the correct texture.
  3. Leave the mixture to sit for atleast 2 hours on the kitchen counter or in the refrigerator.
  4. Now add chopped onions, fresh coriander, salt & all the spices(except sesame seeds), mix well.
  5. Heat oil in a kadhai. Then wet your hands and take a small portion of the mixture and flatten it on your palm. Make a small hole in the middle with your finger.
  6. Coat with sesame seeds & fry the vadas on a medium flame until crisp. Serve hot with mint coriander chutney & tea.
