  1. Get 320 g flour type 02 - not refined flour
  2. Get 20 g unsalted butter at room temperature
  3. Take 20 g caster sugar
  4. Prepare 3 g instant yeast (or 13 g fresh yeast)
  5. Make ready 3 g salt
  6. Get 180 ml lukewarm water
Steps to make Burger buns:
  1. Place all dry ingredients in a bowl. If using fresh yeast, melt this first in a little water with some of the sugar. Add the butter and rub until combined. Add the water and mix until all combined. Knead for few minutes until the dough is shaped in a smooth ball. Oil the bowl again and place the dough to rest until double in size.
  2. After the first raise, knock your dough back and shape into a cylinder. Divide into 6 buns of 95 g each. Place on the baking tray and cover for a second proof. Once doubled in size, wash with the mix of egg and bake for 15 minutes at 180 C.
