Get 500 x fusili pasta
Prepare 100 g rucolla
Take 4-5 big red onions
Get Sundried tomatoes in oil
Make ready Salt
Make ready Pepper
Make ready Balsamic vinegar
Prepare 3 table spoon Sugar
Prepare 1 table spoon Honey
Make ready 150 g sunflower seeds
Instructions to make Pasta salad:
Finely chop the onions and sundried tomatoes.
Put a saucepan on a medium-high heat and add 2 tablespoon oil from sundried tomatoes.
Add the onion then cook until softened and just turning golden, stirring occasionally.
Add sugar or honey, or combination and caramelize the onion. Lower the heat, stirring occasionally and cooking for about 4-5 min.
Add 3-4 table spoons of Balsamic vinegar, stir and let cook for other 3-5 min.
Push the onion to one side of the pan and to the empty side add sunflower seeds and cook until getting brown. Then turn of the heat and set aside.
Meanwhile cook the pasta.
Mix the pasta with onion, sunflower seed, add sundried tomatoes, salt and pepper, and rucolla in a big bowl. (Cut roughly the rucolla-optional)
