  2. Make ready 3 tbsp Soaked Black eyed peas or any beans u like
  3. Take 1/4 kg Yellow Pumpkin
  4. Get salt
  5. Make ready 1 pinch turmeric powder
  6. Get 3 tbsp grated coconut
  7. Prepare 1/2 tsp cumin seeds
  8. Get 2 clove garlic cloves
  9. Get 1/4 tsp Red chilly powder
  10. Make ready 1 tsp Coconut oil
  11. Make ready 1/4 tsp mustard seeds
  12. Take 6 curry leaves
  13. Get 1 small dry red chilly
  14. Take 1 pinch urid dhal
Steps to make Healthy Pumpkin curry (kootu curry):
  1. Cut Pumpkins into small cubes. Set aside the soaked channa and black eyed beans. ( can be soaked for 3hours)
  2. Pressure cook the soaked Black channa and black eyed peas till it is done.
  3. Once they are done, add the cut Pumpkins, salt and turmeric powder with them and just cook it for one whistle.
  4. Grind coarsely the grated coconut, cumin seeds, red chilly powder and garlic cloves. Just grind roughly
  5. Open the pressure cooker, check the pumpkin, it should be soft. No matter if it loses its shape.
  6. Switch on the flame, heat a pan add oil to that and temper mustard seeds, red chilly, urid dhal, curry leaves.
  7. Add the boiled things and ground coconut mixture, mix and cover the pan for 2 minutes.
  8. After two minutes open the pan, mix well, check for salt and allow it to boil for few seconds and remove from fire.
  9. Serve this with rice, chappati or other Indian bread varieties. Can adjust spiciness according to your taste. Can add other grams or beans also
