Step-by-Step Guide to Prepare Award-winning Pinto Bean(Chitri Rajma)

Get 2 cups Rajma (Soaked in water over night)
Prepare as required Water
Take as per taste Salt
Make ready 1 Black Cardamom
Get 1 Bay leaf
Get 6 Tablespoons refined Oil
Get 1 teaspoon Deshi ghee
Get 1 pinch Asafoetida
Take 2 Cloves
Get 1 Red chillies powder
Take 3 Onions Paste
Make ready 1 Small Size ginger (paste)
Take 3 Medium Sized Tomato paste
Prepare 2 Green chillies
Get 2 Red chillies (dry)
Take 1 Teaspoon Cumin seeds
Prepare 1 and 1/2 Teaspoon Garam masala powder
Get 1/2 teaspoon Roasted Kasuri methi
Get Handful Coriander leaves
Instructions to make Pinto Bean(Chitri Rajma):
Turn on the gas flame, now place a pressure cooker add their soaked pinto bean, water to it's top level, cloves, bay leaf, black Cardamom, 1/2 teaspoon of refined oil and pressure cook it and set it's load. Allow it to cook and wait for 1 whistle, then medium the flame and again wait for 4 whistle. Then turn off the gas. Let the gas release by it's own.
In the mean time start preparing it's masalas. Place a Kadhai turn on the gas flame add 1 teaspoon of ghee, 5 and half tablespoons of oil, cumin seeds, dry red chilli, a pinch of Asafoetida, just, saute it then add all the onion, ginger, tomato paste together and cook it on low to medium flame, adjust accordingly. Then add red chilli powder, fry continuously then add salt as per taste, Cook it for another 4 mins. When the oil seperates from the masala then it's done.
Now add boiled Bean and just fry it well with the masalas for 2 to 3 mins, if required add more water and cook it on Medium flame then add Garam masala to it and last add Kasuri methi and Coriander leaves. Then it's done enjoy it with rice.
