  5. Get <Strawberry Sauce>
  6. Prepare 1/2 punnet (*about 125g) Strawberries *Raspberries are also good!

Instructions to make Eton Mess:
  1. Make Strawberry (Raspberry) Sauce. Rinse Strawberries, remove the hulls, and slice thickly. Place them in a saucepan, squash a little bit using a masher or spoon to let some juice come out, as this will speed up the cooking process. Add Sugar and bring to the boil over medium heat, stirring occasionally. Reduce heat to low and simmer for 10 minutes, stirring occasionally. The sauce will thicken up slightly as it cools.
  2. Rinse 1 punnet of Strawberries, remove the hulls, and cut in halves or quarters.
  3. Place Thickened Cream and Icing Sugar in a bowl, beat until thick. Add broken Meringue and Mango pieces, and stir to just combined.
  4. Layer some of the meringue mixture, strawberries and strawberry sauce in serving glasses. Top with the strawberry sauce and serve immediately.
