  1. Get 2 1/2 cups oats
  2. Make ready 1 cup almond flour
  3. Make ready 1/2 cup honey
  4. Make ready 2 tbsp smooth peanut butter
  5. Make ready 1/2 cup coconut oil
  6. Get 1 cup raspberry jam
  7. Make ready 1/2 cup dedicated coconut
  8. Get 1 pinch salt
Steps to make Raspberry Oatmeal Bars:
  1. Blend the oats in a food processor until course.
  2. Mix the oats, almond flour, coconut oil, honey & peanut butter in a large mixing bowl.
  3. Take out 1/2 cup of the mixture & place the remainder in a baking tray lined with grease proof paper, pressing down tightly to form the base. Prick the base with a fork.
  4. Put the tray in a preheated oven at 180C for 10 mins.
  5. Remove the tray an allow to cool.
  6. Once cooked add the jam, spreading it evenly over the base.
  7. Add the desiccated coconut evenly over the jam.
  8. Add the 1/2 cup of the oat mix to the top for the topping.
  9. Put the tray back in the oven for 10-15 mins, until the top is golden-brown.
